dc.description.abstract |
Bu çalışmada İstanbul ili piyasasında açık mekânlarda (sokak satıcıları) ve kapalı
mekânlarda (restoran, büfe vb.) satışa sunulan midye dolmalarının mikrobiyolojik
kalitesinin halk sağlığı yönünden araştırılması amaçlanıştır. Bu amaçla İstanbulun
farklı ilçelerinden 25 açık mekân satıcısından ve 25 kapalı mekân satıcısından temin
edilen midye dolma örneklerinde toplam aerobik koloni sayısı, Escherichia coli sayısı,
koagülaz pozitif stafilokokların sayısı, Bacillus cereus sayısı ve Salmonella spp.
varlığı araştırılmıştır.
Toplam aerobik koloni sayısı açık mekânlarda satışa sunulan midye dolma
örneklerinde 2,20 – 7,23 log kob/g (ortalama 6,27 log kob/g), kapalı mekânlarda satışa
sunulan midye dolma örneklerinde ise 2,11 – 5,34 log kob/g (ortalama 4,27 log kob/g)
arasında saptanmış olup ortalamalar arasındaki fark istatistiki açıdan önemli
bulunmuştur (p<0,05).
Açık mekânlarda satışa sunulan tüketime hazır midyelerden ikisinde (1,18 ve 1,93 log
kob/g); kapalı mekânlarda satışa sunulanların ise birisinde (1,70 log kob/g) B. cereus
varlığı saptanmıştır. İncelen tüm örnekler içinde sadece birisinde (açık mekân) 1,18
log kob/g düzeyinde E. coli ve 1,60 log kob/g düzeyinde koagülaz pozitif stafilokoklar
tespit edilmiştir. Örneklerin hiçbirisinde Salmonella spp.’ye rastlanmamıştır.
Elde edilen bulgular kapalı mekânlarda satışa sunulan midye dolmaların
mikrobiyolojik kalitesinin açıkta satışa sunulanlardan daha iyi olduğuna işaret
etmektedir. Oransal düşük olsa da B. cereus ve E. coli gibi patojen mikroorganizmaları
içerebilmeleri nedeniyle midye dolmalardan bazılarının halk sağlığı açısından risk
oluşturabileceği sonucuna varılmıştır. |

In this study, it was aimed to determine the quality of stuffed mussels sold by street
vendors (food stall) and shops (restaurants, kiosks, etc.) in Istanbul, in terms of public
health. With this aim, 25 individuals from street vendors and 25 individuals from shops
were analyzed for the total aerobic colony, Escherichia coli, coagulase positive
staphylococci, Bacillus cereus counts and existence of Salmonella spp.
Total aerobic colony count of samples sold old by street vendors were 2,20 – 7,23 log
cfu/g (avg. 6,27 log cfu/g) while it was 2,11 – 5,34 log cfu/g (avg. 4,27 log cfu/g) fort
he samples obtained from shops. This difference has been regarded as statistically
significant (p<0,05).
Two individuals of stuffed mussels from street vendors (1,18 and 1,93 log cfu/g), and
one individual from shops (1,70 log cfu/g) were determined B. cereus positive. Only
in one of the analyzed stuffed mussels (of open space), E. coli (1,18 log cfu/g) and
coagulase positive staphylococci as 1,60 log cfu/g, besides, in none of those stuffed
mussels, Salmonella spp. were detected.
The result indicates that the microbiological quality of shops stuffed mussels is better
than the ones of by street vendors. It was concluded that some of the samples may have
a risk for public health because they may contain pathogenic microorganisms such as
B. cereus and E. coli although their percentage is very low. |
